I have several comfort foods and one of them is: a cup of garlic rice, 2 sunnyside eggs and fried milkfish or bangus… with a cup of hot coffee. Yum!
You can find packs of frozen marinated milkfish in the Asian stores but I prefer the plain one. Each pack comes with 2 boneless milkfish belies and make sure you thaw it inside the refrigerator a few hours before using.

Ingredients for Marinated Milkfish (my version):
~ 1/2 cup Vinegar
~1/4 cup Fish sauce
6 Garlic cloves (you can add more if you like)
Pinch of Sugar, salt and pepper
1/4 – 1/2 cup Calamansi juice – this is the game changer. It adds a nice tangy flavor that’s different from lemons or limes.

When you’re ready to marinade the fish – combine all the ingredients in a bowl and mix well. You can adjust the taste to your liking.
Prepare a pan and lay the milkfish pieces.


Gently pour the marinade. Cover with plastic wrap and let it sit in the refrigerator overnight or for at least 3 -4 hours.
To cook: fry in hot oil or bake per package instructions.
